When I saw the new spooky drink at Starbucks, I knew I had to make a fun and healthier version at home. This purple smoothie is swirled with a green-hued chia pudding, to replicate the “bat warts and lizard scales” found in the original.

This drink isn’t only fun, it’s tasty! I’ve heard that the Starbucks version tastes like an orange creamsicle, so I added a little orange juice to this smoothie to mimic that flavor, but it’s also loaded with antioxidant-rich blueberries and frozen banana to replicate the bold purple color.

The addition of chia seeds make this shake look more “spooky,” like the Starbucks drink, and they also make this smoothie more filling. I added a touch of matcha powder to give it a subtle shade of green.

Ingredients
 
 

Matcha Chia Pudding

Purple Smoothie

  • 1/2 cup orange juice
  • 1/2 cup water , or almond milk
  • 1 frozen banana
  • 1/2 cup frozen blueberries
  • 1/2 cup frozen pineapple

Optional Toppings

  • whipped cream
  • extra matcha powder

Instructions

Make the Chia Pudding:

  • Combine the chia seeds, milk, matcha powder, and maple syrup in a bowl and use a whisk to mix thoroughly. Place the bowl in the fridge to allow the chia pudding to thicken.

Make the Purple Smoothie:

  • Combine the orange juice, water, banana, blueberries, and pineapple in a blender and blend until smooth. Add extra water if needed to facilitate blending.

Assemble the Witch's Brew Smoothie:

  • Pour a little bit of the purple smoothie into the bottom of a glass, then add a few spoonfuls of the chia pudding around the sides so that you'll see the "bat warts and lizard scales" peek through for serving. Continue layering the smoothie and chia pudding until the glass is full. Top with whipped cream and a sprinkling of extra matcha powder to complete the look.

Recipe Notes:

  • Use coconut whipped cream for a dairy-free topping.
  • If you don’t have matcha powder on hand, you can omit it! It doesn’t do much flavor-wise, so it’s just for looks. Spirulina would have a similar color effect, but I do think you can taste the “seaweed” flavor if you use too much.
